Vegan Chocolate Nog Truffles 


Because of the dramatic Election, the holidays seem to have been overshadowed. Is this how everyone feels? Or is it just me because I live in Washington, DC. Well, we can not forget them! Thanksgiving is approaching – it’s next week. To get in the holiday spirit, I have been making Truffles. These Chocolate Nog Truffles cane from a recipe I found in Veg News. They are spiked with spicy rum and nutmeg. They scream, “It’s the Holidays!” They are also really easy to make, I promise.

Here is what you need…

INGREDIENTS 

  • 1/2 cup vegan butter
  • 3 3/4 cups powder sugar
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons dark or spicy rum
  • 1/2 cup sliver or chopped almonds
  • 2 cups vegan chocolate chips
  • 1 tablespoon vegan shortening
  • Roasted almonds or toasted coconut flakes for garnish.

Here is what you do…

INSTRUCTIONS 

  1. Using a handheld mixer, cream butter. Add powder sugar and nutmeg. Beat until coarse crumbs form. Slowly pour in rum and bear until fluffy. Fold in sliver or chopped almonds. Chill in refrigerator for 1 hour.
  2. Line baking sheet with wax paper or parchment paper. Remove mixture from refrigerator and use hands to roll into truffle balls. Place balls on to baking sheet and chill in refrigerator for 30 minutes.
  3. In a double broiler over medium heat melt chocolate and shortening. Stir and combine. 
  4. Remove truffle balls from refrigerator. Using a fork slowly lift truffle ball from baking sheet and dip it in the melted chocolate mixture.
  5. Once all the truffles are covered with chocolate top each truffle with a roasted almond or toasted coconut. 
  6. Place back in the refrigerator and let cool until chocolate mixture has harden into a shell. 
  7. Share with friends and family. Enjoy! 

I brought these Truffles into work and everyone loved them. These would also be great to bring to any holiday party.

Zoe’s Baptism¬†

 

On Sunday, June 12, 2016 at 2:15, my sweet Zoe got baptized at St. Mary’s Catholic Church in Old Town, Alexandria.

Getting Zoe Baptized was never a question. We were definitely always planning on it. However, I waited until she was 9 months old, the perfect time.

It is such a special ceremony that I wanted to make sure it was celebrated properly. I didn’t want to rush into planning it, until I actually had the time to dedicate towards planning.

The early days of motherhood were the absolute sweetest. It was those days that I had the opportunity to get to know my sweet Zoe and watch her up close as she got to know the world. Sometimes those days and nights were long and overwhelming, but I focused on snuggling Zoe, as I also settled into my new identity as Zoe’s mama.

The last thing I wanted to do was use any of that sweet time towards planning. So I waited to plan her baptism until I was ready to plan.

Turns out, at 9 months old, Zoe is full of playful personality. And June is the best month for a baptism, because the weather is warm enough for baby Zoe to wear a cute white gown.

THE CHURCH

St. Mary’s Catholic Church in Old Town, Alexandria, is one of the oldest and most beautiful Catholic Churches.

Although, I was not baptized at St. Mary’s (I was baptized at Our Lady of Lordes) it was special for me that my daughter had the opportunity to be baptized at the same church I went to as a child. The same church that I received the sacraments of reconciliation, holy communion, and confirmation. It was special and tradition.

THE CLASS

In most cases when you receive a sacrament with the Catholic Church there is a mandatory class before. ¬†When I mention – “Oh, at my baptism class…” People always roll their eyes, or gasp…”You had to take a class.”

The classes don’t bother me at all. I actually like them. Sacraments are important and the Church isn’t just going to hand those out to everybody. They want to make sure you understand why you are receiving the sacrament. They also want to prepare you of what will happen that day, and your responsibility for the days to come. The priest teaching the class also will help clear up any questions or concerns you have.

BAPTISM GOWN and ACCESSORIES 

As you all know, fashion is very important to me, so of course Zoe was dressed up in her absolute finest.

I love a unique, hand-made, one of a kind dress. So that is exactly what Zoe wore. I was so thankful that my Aunt Lynda was able to make Zoe her beautiful baptism gown. It was made from the softest summer fabric in the warmest white. She added the sweetest ivory details.

All of the accessories she wore I bought from, One Small Child. The lace bonnet is in the color ivory. It is beyond stunning. The shoes are a soft white/ivory combination, which added a sweet touch.

My daughter’s feet are very petite so it is always a challenge to keep shoes on her. During the baptism, she got so excited she started kicking her feet, so the shoes slipped off. But I’m still glad I had them.

The combination of the bonnet, shoes, dress, and bloomer, really made her look like a doll. This special outfit is definitely one I will keep forever.

THE CEREMONY

The ceremony was very traditional, however, Zoe was the only baby baptized that day. Because of this we were able to go right upfront and crowd around her.

Erik held her the whole time. Father Andrew (the priest) blessed her by placing a cross of oil along her chest. We being her parents, and Jackie, her now God mother, mimicked the prist, rubbing a cross of oil upon her.

Zoe giggled, cooed, and babbled.

Father Andrews lit a candle.

Then we took her over to where the holy water was. The priest poured the water over her head. At first it seemed refreshing and cool, but then it trickled down into her eyes. She cried for a couple seconds, but then was back to giggling, cooing, babbling, wet hair and all.

After the ceremony was over, we spent time in the church taking pictures. Then we headed to the after party!!

THE RECEPTION 

After the ceremony, we all headed over to one of my favorite restaurants in Old Town, Columbia Firehouse.

This restaurant use to be an old fire house. It has a really cool dining room and outdoor seating. The food is also really delicious.

We started with drinks and then ate dinner. Zoe was so exhausted from her baptism, that she actually napped during dinner.

At the end, Zoe’s baptism day was lovely. We received her candel that burned during the ceremony, a small cross quilt, and a certificate from the church. I also gave her a gift – her first pair of white pearl rosary beads.

a Merry Christmas recap

Christmas is over. (sigh)

I have mixed feelings about this.

In a way, this Christmas season was stressful.¬†Thanksgiving was so late. Christmas came so fast. I was super busy at work. I felt like there was no time to shop, plan, cook, chop down a tree, send out cards etc… The on going Christmas music started to annoy me.

But in another light, I am sad to see it go.

I love shopping at the Christmas market in DC. And seeing a random person dressed up as Santa really puts you in the Christmas spirit.

Also during Christmas time. My house looks amazing with classy Christmas decorations. I loved all of the Christmas cards I received. They are my favorite!

We ate my homemade¬†lasagna – the sauce was my nana’s recipe.

On Christmas day, we woke up early, and went to my mom’s to open presents. We all gave and received some great gifts.

Later we ate lobsters for Christmas dinner.

Then for dessert we ate my homemade Mexican Hot Chocolate Cake with Chocolate Buttermilk Frosting. The cake is gluten free.

Everything was delicious.

The day after Christmas, my sister and I did a little shopping. I definitely have a new outfit to wear every day of this week. She got some great stuff too. I know this isn’t a fashion blog, but I’ll post my outfits on instagram just in case you are interested in what I wear when I am not in workout clothes. ¬†Oh p.s. Did you know free people now has workout clothes? They are pretty stylish.

On Saturday, we did Christmas with my husbands parents. It was fun to open more presents, and hear all about their lovely time spent in Idaho. Lucky for them, they had a White Christmas.

At the end, of it all, my favorite part about the holiday is eating good food, drinking good drinks, and hanging out with loved ones. Oh and watching some great Christmas movie.

Hello December, I am a Goal Digger!

After getting my wisdom teeth pulled at the end of October, my stress level finally went down. November began stress free, and I became aware of the cheerful holiday spirit, which was making its first appearance. The month was full of crisp fall runs, colorful leaves, and lots of big bold fall flavors. November ended, with a relaxing thanksgiving holiday surrounded by friends and family- there was lots to be thankful for. Yesterday, I said my final goodbyes to November, and today I am saying Hello to December.

December is an interesting month, because it is the last month of the year. People get so wrapped up in the traditions of Christmas that they forget to focus on goal setting. Yes, December is the the month to celebrate Christmas, but it is also the month to reach your final goals of 2014 and start to set new ones for 2015. In 30 days we will be saying goodbye to one year and hello to another. goal1

A couple of my December Goals are…

 

Personal Christmas related:

  • Celebrate Christmas! Get my Christmas tree, and decorations up. Christmas only happens once a year, so the sooner I can get my Christmas decorations up the better. Time is flying by and if I wait too long, I won’t have much time to really enjoy it. I don’t over decorate. I have a tree, and a few things here and there. One of the joys of being a home owner is the fun of decorating, but if you rent you can decorate too. I choose pretty Christmas decorations, over funny tacky ones. One of my favorite thing about decorations is the warm white lighting the Christmas tree lights give off. I also love the smell of a live tree. The reason why it is important to decorate is because it really does lift your spirits and reminds you to take in all of the holiday cheer.
  • Decide if I am going to give out Christmas cards this year. We only have 25 days until Christmas.
  • Figure out who I need to buy for. I already bought a couple gifts, but I need to finalize my list and shop, shop, shop. I want to shop at Christmas markets and specialty shops.

Health and Fitness Goals:

  • Continue cooking my own food. The more I cook, the more I know exactly what I am eating. Plus cooking is fun, and eating my own food is satisfying! Abs are made in the Kitchen! Update blog more with delicious recipes.
  • Continue to read labels and reduce sugar intake. I QUIT SUGAR remember (wink wink) Set goals for 2015.
  • Run, Lift, Yoga. Start thinking of goals for 2015, and races.

House and Home:

  • It is amazing how much we have done with my little 1950’s duplex. Two years ago we started with nothing, (we¬†were sitting on beach chairs in the living room, because we didn’t have a couch.) But thats what it takes when you want to start from scratch. Things have really come along. I can’t wait to share with you some of our DIY projects.

Blog:

  • This month on the blog get ready for a lot of GIFT IEAS.¬†I’m going to be telling you the best gifts for runners, yogis, and gym unicorns. I am also going to be talking about what to get your foodie. So if you need Holiday Gift Ideas. Stay tuned.

Got leftover Turkey? Make Stock!

Another wonderful Thanksgiving came and went. The feast was amazing full of my favorite fall flavors. ¬†However, just like everyone else, my fridge is over packed with tons of leftovers. Well if you are like me, with a stuffed fridge, questioning what to do with all of those leftovers, you’ve come to the right blog.

I’ve got your back!

Lets start with ideas for your leftover Turkey.

There are lots of things you can do with your leftover turkey. Some like to go traditional, by making a good old turkey sandwich. My husband, however got a little bit more creative by making a turkey pot pie from scratch. I’m so proud of him… This is what we ate for dinner.¬†turkey pot pie

The turkey pot pie was delicious, but it only used some of the left over turkey meat. We still have a lot more meat to use and the whole turkey bones and all. The last thing I am going to do is let those bones go to waste…

At this point, some of you may have your jaws dropped… gasping, “You eat Turkey?” I have said it before, but I will say it again, although, I eat mostly a plant based diet, and almost always experiment with vegan and vegetarian cooking, I do not label myself as a vegetarian. I occasionally eat meat, as long as it is organic/wild caught. I also am working on being more balanced in my life, and definitely believe at certain times in life, organic animal based protein is necessary in moderation.

Moving on…

Lets talk about STOCK…

I use vegetable stock all the time. I use it in my butternut bisque/soup recipe. I use it in replace of water in any recipe that calls for water. It actually really does give that extra flavor. However, two weeks ago, I made my very own vegetable stock for pho soup, and (not bragging, just stating the truth) it was over the top good. Store bought vegetable stock just doesn’t even compare to made from scratch vegetable stock. I was almost a little mad when I discovered this… because now I am going to always have to make my own, or at least have some homemade stock on hand. The key to this is to make it in bulk and then freeze it.¬†

Another reason why I prefer making my own is because I have more control on what I put in it. No additives or preservatives like the store bought kind, plus I can really customize it to my taste buds. Depending on what dish I am making, I can add a little more of one spice. It is also much more economical. Save money, make a big pot of stock, and freeze it so you always have it on hand.

There are also amazing health benefits to stock, especially chicken stock (as long as it is organic.) According to Sarah Wilson from IQS…

  • Stock is full of minerals and electrolytes, in a form easy for the body to assimilate.
  • Stock has been know for centuries as a healing remedy for the digestive track because of it’s soothing effect on areas of inflammation in the gut.
  • Stock is a de-stressor. It repairs and calms the mucous lining in the small intestine.
  • It is great for anyone with Thyroid and autoimmune issues.

Now there are many types of stocks other than Vegetable. There is Chicken, Turkey, Bone, Fish… the list goes on. And for the same reasons, I listed above, it is better to make your own.

But because Thanksgiving has just ended, the odds are you have some leftover Turkey on hand…

So now lets use those turkey bones and make some Stock!

INGREDIENTS

  • 1 yellow onion, chopped up roughly
  • 1 white onion, chopped up roughly
  • 4 carrots, peeled and chopped up roughly
  • 4 celery stalks, chopped roughly
  • garlic cloves
  • 3 sprigs of rosemary
  • 2 tablespoons of thyme
  • 1/2 teaspoon sea salt
  • 3 bay leaf
  • Turkey bones (use organic turkey)

INSTRUCTIONS

  • Remove turkey meat from bones, leaving some on if desired.
  • Cut turkey meat in small pieces and place a side. (This meat can be used later for turkey soup.)
  • Place all ingredients in a big pot over the stove. (or crock pot, slow cook)
  • Fill pot with water to cover all ingredients, (about 20 cups of water.)
  • Bring liquid to a boil, continue to boil for 20-30 minutes.
  • After 20-30 minutes of boiling, reduce heat to a simmer.
  • Cover and simmer for 3-6 hours. 3 is the minimum, but 6 hours is ideal for ultimate flavor and health benefits.
  • Once simmered for the time you choose, strain all ingredients. Now you have Turkey Stock!

Note: You can use immediately for soup, or you can store in the freezer.

Because of you, I am Thankful!

Happy Thanksgiving!

This year I am Thankful for so many things…

but just to name a few…

I am thankful that I got the opportunity to travel to Thailand. It was a trip of a lifetime, which I shared with Elissa, Mariana, Chis, and Erik. I am beyond lucky that finally I got to experience that part of the world.

I am thankful that I had the courage to create this blog. Blogging gives me the freedom to express myself and oppinons with words. I am thankful to you, my readers, who I hope I inspire everyday to run, lift, eat, and live a healthy lifestyle.

I am thankful for my clients. To me it is not just cutting and coloring your hair. It is all about creating a customized look for you, so you look and feel your best. Thank you, for letting me create. Thank you for sharing your stories with me. But most of all, thank you for trusting in me. Seeing you feel confident is the ultimate satisfaction.

I am thankful that I can run. I am thankful that I live in an area with such an awesome running community. They organize awesome races of all kinds. I am thankful for the races I ran this year, Cherry Blossom 10 Miler, Parkway Classic, ATM, and today’s Turkey Trot, and although, it wasn’t a race Running on my Wedding day was unforgettable!

But most of All (saving the best for last) I am thankful for Erik my husband, and our beautiful wedding day. We are forever thankful to everyone who came to our wedding. We made such great memories. It was the best day ever!

Turkey Trots and Cheesecake

Last year I wrote about Turkey Trots and Pies.

This year it was all about the Cheesecake!

I made a Sweet Potato Cheesecake earlier in November as a test run, so I would be prepared for Thanksgiving. I brought it into the salon and it was gone in 5 minutes. Guess it was good. On Wednesday we had a Thanksgiving feast at the salon. Everyone requested that I make the Sweet Potato Cheesecake again, so I did, along with a big pot of Butternut Squash Soup.  Everything was a big hit!

So when it came to my family’s Thanksgiving, we all, headed to my mom’s house. Along with some mashed potatoes and root vegetables, I brought over a Sweet Potato Cheesecake with some fresh homemade whipped cream. Yum!

As for my Thanksgiving tradition РRunning a Turkey Trot.  Every year I run a different one in the area.  This year, Lina and I ran the Arlington one. It was a 5k of hills. The turkey trot is by far one of my favorite races. I love it  for two main reasons, 1) it celebrates fall, 2) it is all about being with family and friends. There are people of all ages including kids, and even some dogs. But at the end of the day, no matter if you are  running a turkey trot in the city or not, it always has a neighborhood feel.

This Turkey Trot was fun for me because I ran with Lina and….

Goodbye October, Hello November!

Halloween has come and went.

And, you probably feel like this right now…

halloween candyBut thats okay, because day light savings time gave us an extra hour of sleep… So now we are well rested and ready to take on November!

November is here, and I am excited. It is probably my favorite months. 

These are my top 3 reasons why I heart November and my November goals…

 

1.    I love November because it is so damn colorful!

On the first day of November, my husband and I left the city to spend some time in the country. The fun thing about living in the DC area is that you only have to drive 90 minutes out and you hit beautiful country roads. Virginia is also very historical! Lots of history are among these country roads.

fall leaves country roads2.   Another reason, I love November is because it is so damn tasty.

Thanksgiving is my favorite holiday. And this November I will be doing lots of cooking. I want to come up with some fabulous new additions to our traditional Thanksgiving. So be prepared for lots of food posts.

3.   And the final reason, I love November is because it is the perfect month to run. 

I wake up every morning with a strong desire to hit the trail. There is only a short time that the leaves are this colorful and I don’t want to miss it. Plus, soon it will be really cold and I’ll have to pull out my winter running gear. So these are the last weeks where the weather will be perfect for running. Also, I must run, to counter act all of the cooking, food testing, eating, tasting I will be doing in order to find the prefect Thanksgiving addition. So I will be participating in Pile on the Miles. (More on that later.)

NYC MARATHONAlso CONGRATS to everyone who ran the NYC Marathon! You guys rocked it out!
